We’ve adapted the original version for vegans using Tofu Cubes in a fragrant spiced tomato curry with deeply savoury Methi (Fenugreek) and studded with juicy peas.
Heat gently in a pan on the hob or in a microwave. Serve with rice or breads and sprinkle with coriander (unless you're a coriander hater - and we know there’s a fair few of you!!)
